Baked Stone Fruit French Toast OverheadHere is a busy-morning recipe to get your day going. This baked stone fruit french toast recipe can be started the night before and then you just have to throw it in the oven in the morning while you are getting everything else ready. I also bake the french toast in smaller individual dishes which helps it bake even faster. I went with peaches and plums for this version and mixed it in with the bread so that I can get away with less sugar. The natural sugars from the fruit help to sweeten the dish. You can also get away with not using any oil or butter when baking, which makes the recipe even healthier. For a bit of a different taste, I have used fresh basil and allspice, along with cinnamon to flavor the french toast.

Prep time: 5 minutes, Cooking / Baking time: 30 minutes
  • 6 slices whole grain bread
  • 2/3 cup 1 % milk
  • 2 large eggs
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1 tbsp chopped fresh basil (about 12 leaves)
  • 2 peaches
  • 3 plums
  • 2 tbsp honey
  • 2 small oven-safe dishes
  • 1 bowl

  3. Add the bread to the bowl and mix it together with the egg and milk mixture

  6. You can either bake the french toast right away or wrap the two dishes in plastic wrap and put them in the fridge overnight
  7. When ready, turn the oven to 375F and place the two dishes into the oven (without the plastic wrap)
  8. Let the french toast bake for about 30 minutes until they start to expand and brown on top
