Black Cocoa Chocolate Pancakes Presentation 2I am absolutely fascinated by black cocoa. The color alone is enough to make me want to use it all the time, but it also has a much more intense flavor which obviously helps. I have recently experimented with it in pancakes but it did take me a few tries. Black cocoa has almost no fat so the proportions to use are a little different. Actually, many recipes recommend to mix it with regular cocoa powder, but then how would I achieve the dark, black color? Anyway, I have figured out the right amount and since we ‘eat with our eyes’ I also mixed in some white chocolate for contrast.  Since there is extra chocolate in the recipe, I was able to remove the sugar, and combined with whole wheat flour, still create fairly healthy black cocoa and white chocolate pancakes.

Prep time: 5 minutes, Cooking / Baking Time: 5-10 minutes
  • 3/4 cup + 2 tbsp whole wheat flour
  • 2 tbsp black cocoa powder
  • 2 tsp baking powder
  • 1 large egg
  • 1 cup 1% milk
  • 1 tsp pure vanilla extract
  • 2 oz white chocolate
  • 1.5 tbsp maple syrup
  • 1 tbsp butter
  • 2 bowls
  • Griddle / frying pan
  1. Combine the flour, cocoa powder, and baking powder in one bowl

  4. Chop up the white chocolate into small 1/4″ piece and stir them into the pancake batterWhite Chocolate
  5. Heat griddle or frying pan to medium heat
  6. Add the butter to the pan and pour about 1/4 cup of batter per pancakeChocolate Pancakes Griddle
    • You should be able to make about eight 4″ pancakes
    • If the frying pan is too small do this in batches
  7. Leave the pancakes on one side until bubbles start to form on top and the edges start to dry (about 2-3 minutes)
