Chorizo chicken Potato Stew OverheadIt is technically Spring but given the temperatures around here, there is still plenty of time for a warm and comforting stew. Here is a slightly lighter version of a Spanish chorizo and potato stew. The recipe is very similar to a traditional stew but I have replaced some of the chorizo with chicken breast to reduce the fat. I also finished the stew with wilted spinach to sneak in a few more vegetables.

Serves 4
Prep time: 5 minutes, Cooking / Baking time: 40 minutes
Ingredients
  • 2 chorizo sausages
  • 2 boneless and skinless chicken breasts
  • 1 onion
  • 1 red bell pepper
  • 2 tomatoes
  • 4 medium potatoes
  • 1/2 bunch spinach
  • 1 tsp dried oregano
  • 1 spring of rosemary
  • 2 bay leaves
  • 1 tsp smoked paprika
  • small pinch of saffron (optional)
  • 1 tsp ground black pepper
  • 1/2 tsp salt
  • 4 cups low sodium chicken or vegetable stock

Method

  1. Put the pot on the stove and turn to medium heat
  2. Slice the chorizo into 1/4″ slices and add them to the potChorizo in Pot
  3. Let them brown for about 3-4 minutes on one side and then turn them over
  4. Add the chicken breast to the pot and leave them on one side for 3-4 minutesChicken in Pot
  5. While the chorizo and chicken breasts are browning, finely slice the onion, pepper, and garlicSliced Vegetables
  6. Turn the chicken to the other side and add the onions and peppers
  7. After about 2-3 minutes when the vegetables start to soften, add the garlic for another minute
  8. Dice the tomatoes and add them to the pot, together with the stock, herbs, spices, salt and pepper
  9. Chop the potatoes into rough 1-2″ cubes and add them to the potStew in Pot
  10. Cover the pot and then turn the stove to high until the liquid starts to boil
  11. Turn the heat down to a low heat and let the stew simmer for another 30 minutesChorizo Chicken Potato Stew Cooked
  12. After 30 minutes, turn off the heat and add the spinach to the hot liquid
  13. The spinach will wilt in about 2-3 minutes
