Grilled Garlic and Dill SquidHow about a quick and simple summer seafood dish? I usually strive for simplicity in my dishes and this one is definitely no exception. For this garlic and dill squid recipe, the squid is quickly grilled and then topped with a light garlic and dill vinaigrette. And that is it! Try this with the easy couscous recipe that I previously posted and you can essentially have dinner on the table in about 10 minutes. The vinaigrette also works quite well on other types of seafood so I always make a little extra and use it throughout the week.

Serves 2 (as a main)
Prep time: 5 minutes, Cooking / Baking time: 5 minutes
  • 3-4 small cleaned squid (about 6 oz total)
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tbsp + 1 tsp olive oil
  • 1 tbsp sherry vinegar
  • 1 garlic clove
  • 1 tbsp chopped fresh dill
  • Grill/Griddle (or frying pan)
  1. Preheat the grill to high
  2. Slice the squid every half an inch but do not cut all the way through
    • Leave about a quarter inch at the top so the squid looks like attached calamari ringsRaw Squid
  3. Add half the salt and pepper and 1 teaspoon of the olive oil on the squid and place it on the grill
    • Make sure the grill is really hot, since it only takes a few minutes to cook the squidRaw Squid on Grill
  4. After about 2 minutes turn the squid over to the other side and cook for another 2 minutes

  5. Take the squid off the grill and set them aside
  6. Finely chop the garlic and mix it with the remaining salt and pepper, dill, olive oil and vinegar.Garlic and Dill Vinaigrette
