Mediterranean bean salad presentationWe are moving from one Mediterranean salad to another in this post. This Mediterranean bean salad, however, requires no cooking time at all and is ready as fast as you are able to chop, slice, and mix a few ingredients together. Olives, sun-dried tomatoes, and feta add the Mediterranean flavors which are rounded out with some fresh parsley, olive oil, and lemon juice. The salad takes less than 15 minutes to make and it will stay fresh in your refrigerator for several days.

Serves 8

  • 3 cans of mixed beans
  • 3 carrots
  • 3 celery stalks
  • 24 kalamata olives
  • 12 sun-dried tomatoes
  • 6 oz light feta
  • large handful of fresh parsley (about 1/2 cup)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/4 tsp salt
  • 1/2 tsp ground black pepper


  • 1 bowl


  1. Drain and rinse the three cans of beans and add them to the bowlmixed beans
  2. Finely chop the carrots and celery into small 1/4″ cubes and add them to the bowlcarrots and celery
  3. Slice the olives in half and add them to the bowl
  4. Thinly slice the tomatoes and add them to the bowl
  5. Dice the feta into small 1/2″ cubes and add them to the bowl as well together with the chopped parsleyolives tomatoes and feta
