Baby Artichokes OverheadI used to be intimidated by artichokes as I was not exactly sure how to clean or cook them. It was only recently that I started cooking with artichokes (I think it actually started form my recent interest in Spanish cuisine and the Paella). Well after a couple tries and some experimentation, this vegetable has worked its way into my kitchen. This is a very simple recipe, meant to just highlight the artichoke. I am actually cheating a little bit by using baby artichokes, which requires slightly less cleaning (I will post a separate recipe with the larger artichokes at another time). Either way this is a great side dish, with some light Mediterranean flavors, to serve next to almost any meat or fish dish.

Serves 4
Prep time: 5 minutes, Cooking / Baking Time: 10 minutes
  • 24 baby artichokes
  • 1 tbsp olive oil
  • 1 tbsp lemon juice (you may use the remaining juice to help preserve the artichokes, see below)
  • 3 cloves garlic
  • 1 small handful of fresh sage
  • 1/8 tsp salt
  • 1/4 tsp ground black pepper


  • Bowl
  • Large frying pan


  1. Start by prepping the artichokes
    • Peel the outer leaves until about 2/3 of the lower part of the artichoke is a pale green colour
    • Slice the top 1/3 of the artichoke off and discard
    • Slice the remaining artichoke in halfRaw Artichokes
  2. The artichokes will start to brown almost right away
    • If you prefer, you can mix the juice of one lemon with a couple cups of cold water and soak them in there until they are ready for use
  3. Place the frying pan with the olive oil on the stove and turn to medium heat
  4. When the oil starts to smoke add the artichokes to the pan with the cut side downArtichokes in Pan
  5. While the artichokes are browing, slice the garlic and sage leaves
  6. After about 5 minutes, turn the artichokes over on their other side for another 4-5 minutes until they are soft
  7. With 1-2 minutes remaining, add the garlic, sage, salt, and pepperGarlic and Sage Artichokes
