Polenta with Roast Vegetables and CheeseThis polenta with roast vegetables recipe is actually a complete meal and is a good example of healthy ‘comfort food’, at just under 400 calories. I have used the polenta recipe I posted a while back and combined it with roast vegetables and lots of fresh herbs. The creamy polenta blends perfectly with the roasted crunchy root vegetables and soft tomatoes, while the fresh herbs and a few slices of cheese add a little bit of extra flavor. This simple meal only takes about 25 minutes and most of that time is spent waiting for the polenta to cook and the vegetables to roast, so you have extra time to get everything else ready.

Serves 2
Prep time: 5 minutes, Cooking / Baking time: 20 minutes
Ingredients
  • 2 cups of Polenta (you can use half the serving of this recipe)
  • 1 tbsp olive oil
  • 2 small beets
  • 3 medium carrots
  • 16 cherry tomatoes
  • 2 tbsp chopped mixed herbs
  • 1 oz swiss cheese
Tools
  • 1 pot
  • 1 baking sheet
Method
  1. Preheat the oven to 475F
  2. Place the pot on the stove and follow the instruction for the polenta recipe
  3. While the polenta is simmering away, chop the carrots and beets and place them on the baking sheet with two tsp of olive oil, salt and pepperRaw VegetablesRaw Vegetables in Pan
  4. Place the tray in the oven and let the vegetables start to roast for about 10 minutes
  5. After 10 minutes add the tomatoes, fresh herbs, and another one tsp of olive oil to the pan and let everything roast for another 10 minutesPartially Cooked Vegetables

  7. The polenta should be done by now as well, so remove it from the heat and split it between two platesPolenta
