Smashed Potatoes PresentationThis smashed potatoes dish has a slight twist with the addition of caramelized onions. While the potatoes are roasting in the oven, onions slowly caramelize over the stove top. They add a subtle sweet flavor to the potatoes as you smash them together with a few extra spices.

Serves 8
Prep time: 5 minutes, Cooking / Baking time: 25 minutes
  • 8 medium potatoes
  • 3 onions
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp fresh rosemary (about 2 springs)
  • 1 tsp tsp ground black pepper
  • 1/2 tsp salt
  • 1/2 cup water
  • 2 tbsp chopped fresh parsley

  1. Preheat the oven to 425F
  2. Cut the potatoes into roughly 1 inch piecesRaw Potatoes
  3. Mix the herbs, spices, salt and pepper, with half the olive oil and add them on top of the potatoes
  4. Mix everything together and add the water to the pan as wellPotatoes with Spices
  5. Put them in the oven for about 25 minutes
  6.  While the potatoes are in the oven, add the remaining oil to the frying pan and turn the heat to medium-low
  7. Slice the onions and add them to the frying panraw onions
  8. Let the onions saute and stir them occasionally to make sure they do not burn
    • If the onions are burning too easily, then turn the heat down further
  9. After about 25 minutes you can take the potatoes out of the ovenRoasted Potatoes
  10. The onions should be ready as well
  11. Add the potatoes to a serving bowl
  12. Add the onions on top of the potatoes and smash everything together
