Orange Maple Tempeh Side PresentationTempeh is essentially fermented soy beans, pressed together into a mold which give it that firm texture, making it easy to grill. It is obviously a great vegan option but with the right flavor this can be anyone’s ‘go-to dish’ at a summer barbecue. Just like tofu, tempeh can absorb a lot of flavor so letting it sit in a marinade for a good 24 hours is best. For this orange maple tempeh recipe, I made a marinade using orange marmalade and maple as the main ingredients, balanced with fresh rosemary, garlic, and little bit of balsamic vinegar.

Serves 3
Prep time: 5 minutes, Cooking / Baking time: 10 minutes
Ingredients
  • 1 250g package of Tempeh
  • 1 tsp olive oil
  • 2 tbsp maple syrup
  • 1 tbsp balsamic vinegar
  • 1 tsp orange marmalade
  • 2 cloves garlic
  • 2 springs fresh rosemary (about 1 tbsp chopped)
  • 1/4 tsp salt
  • 1/ tsp ground black pepper
Tools
  • Grill / griddle or frying pan
Method
  1. Finely chop the garlic and rosemary and add it to a bowl together with all the ingredients (except the tempeh)
    • If you are using a frying pan do not include the oil in the marinadeTempeh Marinade
  2. Mix everything together and add the tempeh to the bowlTempeh in Marinade
  3. Cover and refrigerate at least 8 hours (24 hour is better)
  4. Preheat the grill to medium-high heat
  5. Take the tempeh out of the marinade and place it on the grill for about 5 minutes on each side until the outside gets a little crispyGrilled Tempeh
    • If you are using a frying pan, pre-heat it on medium heat and add the olive oil
    • Take as much of the marinade off the tempeh as possible before adding it to the frying pan
    • After you flip the tempeh, then add all the marinade to the pan so that it thickens up while the tempeh is frying on the second side
  6. Take the tempeh off the grill and slice it into wedges
