White Bean Fennel Salad With CheeseOnce you start making slow roasted tomatoes, you will likely mix them into anything. Here they are mixed in with a white bean fennel salad. This Italian-inspired salad combines the soft and mild beans with the crunchy and sharp fennel, and the rich flavor of the slow roasted tomatoes. A little olive oil and lemon juice balance out all the flavors. If you make the slow roasted tomatoes ahead of time, this salad is ready in about 10 minutes, and it will keep in the refrigerator for a few days.

Serves 8

  • 1 can white beans
  • 1 fennel bulb
  • 4 springs green onion
  • 1 large handful fresh parsley
  • 48 slow roasted cherry tomatoes (see recipe)
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • juice and zest of 1 lemon
  • 1/4 cup olive oil


  • 1 bowl
